Cucumber, String Bean and Olive Salad
serves 4
Ingredients
- 1/2 lb string beans, blanched, chilled, halved lengthwise
- 2 ea cucumbers, peeled, seeded and frenched 1/2-inch
- 1/4 ea red onion, very thin half-rings
- 1/4 lb oil-cured black olives, pitted and halved
- 1/4 C parsley, chopped
- 1 t Dijon mustard
- 1 T red wine vinegar
- 2 T extra-virgin olive oil
Instructions
- Whisk together the oil, vinegar, and mustard, then season to taste.
- Toss with the beans, cucumbers, onions, olives and parsley.
- Plate and serve chilled.
